Chard Wraps With Miso &Tahini Lentil Spread
Makes 6-8 wraps (depending on size of leaves)
This recipe has a few steps, and the end result is worth the effort. The Miso & Tahini Lentil spread on it’s own is delicious and when combined with the rice into the steamed chard leaves, makes for a lovely side dish or a well rounded, vegetarian meal.
NOTE: This recipe calls for one cup of cooked white basmati rice. You will need to cook the rice as part of your meal prep.
Miso & Tahini Lentil Spread
Ingredients:
1/2 cup red lentils (soaked overnight)
3/4 cup water (add more water while cooking as needed)
1 Tbsp. sesame tahini
juice of 1/2 a lemon or lime
1 1/2 Tbsp. miso paste dissolved in 1 Tbsp. hot water
1/2 tsp. turmeric powder
1/2 tsp. coriander powder
1/2 tsp. cumin powder
1/2 tsp. fennel powder
1/4 tsp. ginger powder
Cooking Process:
Drain and rinse the lentils that were soaking.
Place water and lentils in a medium pot, and bring to a boil. Skim off any foam that rises to the top.
Add the spices and simmer on low heat, covered, for about 30-40 minutes.
When the lentils are soft and fully cooked, remove from heat and let cool for about 10 minutes.
Add tahini, miso, and lemon/lime.
Mix with an emersion hand blender for a creamier texture or a fork for a rougher texture. Add water as needed for desired texture.
Chard Wraps
Ingredients:
1 cup cooked white basmati rice
Miso & Tahini Lentil Spread
4-6 large chard leaves
Cooking Process:
Bring 1 cup water to a boil in a large pot with steaming basket inside.
Cut the stems away from the chard leaves.
Place chard leaves inside steaming basket and cover the pot.
Steam on medium-low heat for 1-2 minutes.
Remove the leaves from the pot with tongs.
Making The Wraps:
Flatten one chard leaf on a clean, dry surface.
Spread 1-2 Tblsp. rice and 1-2 Tblsp. lentils in the center of the leaf, in a rectangular shape.
Fold in the two short ends, then roll.
